Vietnamese Beef Noodle Soup Recipe

Ingredients :-

(can serve 6 8 person)
Beef knuckle with meat 5 pounds
Beef oxtail 2 pounds
Black peppercorns teaspoon
Cinnamon stick
Cloves 2
Dried flat rice noodles (rice sticks) 2 pounds
Fish sauce tablespoon
Fresh Ginger root 1
Onions (chopped) 2
Rump steak pound (sliced thinly)
Salt tablespoon
Star anise pods 2 ounces
White radish (sliced) 1
White sugar tablespoon

Toppings :-

Fresh bean sprouts
Fresh cilantro (chopped)
Fresh purple basil leaves
Green onion (sliced)
Hoisin sauce (Chinese dipping sauce)
Hot pepper sauce
Limes (quartered)
Mint leaves
Thinly sliced onion

Method :-
a. Season the beef knuckle with salt.
b. Get a big pot and fill the pot with water (2 gallons)
c. Put the beef knuckle in a big pot.
d. Bring to boil and cook for two to three hours.
e. Skim the fat from the surface of the soup.
f. Put in the beef oxtail, onions and white radish.
g. Tie the anise pods, cinnamon stick, cloves and black peppercorns in a spice bag and put into the soup.
h. Add in the fish sauce, salt and sugar.
i. Simmer the soup for four to six hours under medium-low heat.
j. After cooking the soup, add salt to taste.
k. Strain the broth and keep pot at a simmer.
l. Throw away the bones and spices.
m. Boil a pot of lightly salted water.
n. Soak the rice noodles in water for fifteen minutes.
o. After that, cook the rice noodles in the boiling water for about three minutes.
p. Put the rice noodles and the thinly sliced rump steak into a serving bowl.
q. Pour in the boiling broth over the beef and rice noodles.
r. Serve with fresh bean sprouts, fresh cilantro, fresh purple basil leaves, green onions, hoisin sauce, lime and mint leaves on the side.
